Protease enzymes act on the proteins in flour. They are used to reduce mixing and handling difficulties in strong flours. Research conducted at our Bakery Research and Development Center (Fırıncılık Araştırma ve Geliştirme Merkezi (FAGEM)) has shown that the type and dosage of this enzyme must be determined with great precision.
